For the past 7 years we have raised Hampshire pigs and continue to raise this line since they have adapted to our farm and produce meat that is desired by our customers. Our pigs are raised in a system that allow them to interact and grow without the stress of overcrowding and concrete. We feed our pigs to 275-325 lbs to ensure fattening. I believe this fat is one component that distinguishes our product from commercial pork that is often leaner since the pigs weigh from 210-230 pounds.
Our farm provides an environment that respects the dignity of the animal. This means that our pigs have a natural environment to root, eat, and play in the mud. For the sake of efficiency (money) modern agriculture will raise pigs on concrete with 2-8 square feet to call their own. This crowding is stressful to the animal and often results in respiratory illness which requires antibiotics. The link between stress and meat quality is well established and of no surprise; stressed animals produce meat that is tougher with less flavor.
